Let's start with the most common flavors you can find in Mexican food. First, there is the garlic. It comes fresh, in a jar or in powdered form and is used in many recipes; it provides flavor and aroma to food. Salsa, seafood dishes, and Spanish rice, are just a few examples of the use of garlic in Mexican cuisine. Next, there is the onion, which usually comes, fresh or powdered. Other frequent flavors are oregano, cumin, and chili powder. Mexican oregano gives their dishes a rich earthy flavor. There are other types of oregano such as Mediterranean. You are probably familiar with this version used in Italian cuisine. Oregano pairs well with tomato based dishes and these ingredients together, lend an interesting flavor to other recipes. Oregano is also used for topping cold meat of fish salads, and soups.

Cumin has been around since the beginning of history, and adds a characteristic flavor and aroma to the recipes where it is integrated. Other spices are cloves coriander, parsley, epazote, and a long list of herbs and spices.

In order to achieve the real Mexican flavor, it is recommended that you use fresh chiles serranos, along with Mexican oregano.

Ingredients:
2 –large avocados, ripped, peeled, and pitted
1-medium plum tomato, chopped in small dice
1-small finely chopped onion
2-garlic cloves finely chopped
2-tablespoons of finely chopped fresh cilantro leaves
1- tablespoon of seeded and minced chile serrano
2-tablespoons of fresh lemon juice
¼-teaspoon of Mexican oregano dried leaves, crushed
1-tablespoon of olive oil
Salt and black pepper, at taste

Preparation:
You can start by chopping all the ingredients, and as soon as they are ready, then you can continue with the avocados. Thickly mash the avocados with a fork in a medium bowl. Stir in all the remaining ingredients and integrate the Guacamole. The lemon juice will prevent the avocado from oxidation, you can also add the avocado pits, to preserve the green color of guacamole for longer, however, it has to be consumed before it oxidizes and turns greenish brown, (this is just for esthetical reasons, because the flavor does not change, only color does).
Guacamole is a great aside for carne asada, and it is great for tortilla chips, (or totopos), and it goes well on top of tacos. Enjoy.
